Sourced from small and medium-sized farms in the region, the beans reveal a rich sweetness typical of the area. The result is pronounced notes of toffee and caramel, accompanied by the aroma of green apple and a hint of ripe apricot. The washed processing method extracts clean and balanced aromas while preserving the natural sweetness. The exceptional density of the beans, a result of cultivation at high altitudes under intense sunlight, imparts a full-bodied and satisfying character. Located in the northwestern part of the country, near the Mexican border, Huehuetenango has become one of Guatemala’s most renowned coffee-growing regions. This prominence has increased interest in local farms, where women play a key role by actively participating in every stage of coffee production – from harvesting to processing – strengthening local communities. Use 17 g of coffee, ground to 15 clicks on a Comandante grinder. Heat the water to 96°C. Pour according to the following timeline:

2:00 - 300 ml
