About the product

Costa Rica San Diego is a coffee with a bold and complex flavor profile. The taste of a sweet cinnamon roll takes center stage, complemented by the zest of freshly grated lime with a subtle note of cardamom. Sourced from the Tarrazú region of Costa Rica, the beans are handpicked and processed using the lactic anaerobic method. During fermentation in oxygen-free conditions, lactic acid bacteria transform the natural sugars, resulting in a smooth, creamy texture. Processing takes place at the San Diego Mill – the most modern mill in the country, established in 1888 - where daily cuppings and close collaboration with local producers continually raise quality standards. The aroma is delicate, and despite its pronounced flavor notes, the brew remains naturally sweet and refreshingly balanced.

Brewing

For the perfect cup, use 18 g of medium-ground coffee (set to 21 clicks on a Comandante grinder) and water heated to 97°C to avoid any bitterness. Brew using a dripper or Origami method with the following schedule:

0:00 - 45 ml (stir lightly)

0:30 - 120 ml

1:00 - 180 ml

1:30 - 240 ml

2:00 - 300 ml

At the end, stir gently once more to ensure full extraction.
